Snickerdoodle Cobbler

Snickerdoodle Cobbler is a warm, gooey dessert that combines the signature cinnamon-sugar flavor of snickerdoodle cookies with the decadence of a cobbler.

Equipment

  • - 9x13-inch baking dish
  • Mixing bowls
  • Whisk
  • Measuring cups and spoons
  • - Rubber spatula

Ingredients

  • **For the Batter:**
  • - 1 ½ cups all-purpose flour
  • - 1 ½ tsp baking powder
  • - ½ tsp salt
  • - 1 cup granulated sugar
  • - ½ cup unsalted butter melted
  • - 1 cup whole milk
  • - 1 tsp vanilla extract
  • **For the Cinnamon Sugar Topping:**
  • - 1 cup light brown sugar packed
  • - 2 tsp ground cinnamon
  • **For the Syrup:**
  • - 1 ½ cups boiling water

Instructions

  • **Preheat the Oven:** Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
  • **Make the Batter:**
  • - In a mixing bowl, whisk together flour, baking powder, salt, and sugar.
  • - Add melted butter, milk, and vanilla extract, and mix until smooth.
  • - Pour the batter evenly into the prepared baking dish.
  • **Prepare the Cinnamon Sugar Topping:**
  • - In a small bowl, combine brown sugar and cinnamon.
  • - Sprinkle the mixture evenly over the batter.
  • **Add the Syrup:** Carefully pour the boiling water over the entire mixture. Do not stir—the water will create the cobbler’s gooey base as it bakes.
  • **Bake:** Place the dish in the oven and bake for 40-45 minutes, or until the top is golden and the cobbler is bubbling around the edges.
  • **Cool and Serve:** Let the cobbler cool for 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
