Preparation
- In a large skillet, add the ground beef over medium heat. Break it apart with a spoon and cook until it’s browned and cooked through, about 5 to 7 minutes. Season with salt and pepper to taste.
- Once the beef is cooked, add the diced onions to the skillet. Cook for about 3 minutes, or until they become tender. Stir in the diced tomatoes and continue cooking for an additional 3 minutes.
- While the meat and onion mix is cooking, warm the flour tortillas in a different pan or microwave until they are soft and pliable.
Assembly
- Spread some refried beans on each tortilla, followed by a scoop of the beef mixture and a sprinkle of cheese. Roll them up tight, folding in the sides so the filling stays put.
- Place the burritos seam-side down in a baking dish. Pour the enchilada sauce over the assembled burritos and sprinkle with any remaining cheese.
Baking
- Preheat your oven to 350°F (175°C) and bake the burritos for about 15 minutes, or until the cheese is bubbly and golden.
- Garnish your Smothered Ground Beef Burritos with your favorite toppings, such as fresh cilantro and diced avocados, and serve warm.
Notes
Substitutions include ground turkey or chicken. Avoid overfilling the burritos for easy rolling. Store leftovers in an airtight container for up to 3 days, or freeze them for up to 2 months.
