Ingredients
  

For the Cookies
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
For the Filling
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips
  • 1/2 cup crushed graham crackers
  • 1/2 cup buttercream frosting for filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, mix together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  3. In a large bowl, cream the softened unsalted butter with the granulated sugar and brown sugar until light and fluffy.
  4. Beat in the egg and add the vanilla extract until fully incorporated.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the mini marshmallows, chocolate chips, and crushed graham crackers for added texture and flavor.
  7. Using a cookie scoop, drop rounded tablespoons of the batter onto the prepared baking sheets, spacing them about 2 inches apart.
Baking
  1. Bake the cookies for 10–12 minutes or until just set.
  2. Let them cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Assembly
  1. Once cooled, spread a generous amount of buttercream frosting on the flat side of one cookie, then sandwich it with another cookie.
