Preparation
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
- Mix the graham cracker crumbs, cocoa powder, and melted butter in a bowl until it resembles coarse sand. Press this mixture into the bottom of your prepared pan to form a crust.
- In another bowl, stir together sugar, eggs, and vanilla until well combined. Gradually fold in chocolate chips.
- Pour the chocolate mixture over the graham cracker crust and spread evenly.
Baking
- Bake for 20 minutes, then take them out and sprinkle mini marshmallows on top.
- Return to the oven for an additional 5-7 minutes, until the marshmallows are golden brown.
Cooling
- Cool before slicing into bars.
Notes
Serve warm for the best gooey experience. These bars pair wonderfully with vanilla ice cream or a drizzle of caramel sauce. They can be stored in an airtight container in the fridge for up to a week or frozen for up to a month.
