Ingredients
  

For the Crust
  • 1 cup graham cracker crumbs Can substitute with chocolate cookie crumbs for a chocolatey version.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
For the Fudge Filling
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips Dark chocolate chips can be used for a richer flavor.
For Topping
  • 2 cups mini marshmallows Watch closely while baking to avoid burning.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper.
  2. Mix the graham cracker crumbs, cocoa powder, and melted butter in a bowl until it resembles coarse sand. Press this mixture into the bottom of your prepared pan to form a crust.
  3. In another bowl, stir together sugar, eggs, and vanilla until well combined. Gradually fold in chocolate chips.
  4. Pour the chocolate mixture over the graham cracker crust and spread evenly.
Baking
  1. Bake for 20 minutes, then take them out and sprinkle mini marshmallows on top.
  2. Return to the oven for an additional 5-7 minutes, until the marshmallows are golden brown.
Cooling
  1. Cool before slicing into bars.

Notes

Serve warm for the best gooey experience. These bars pair wonderfully with vanilla ice cream or a drizzle of caramel sauce. They can be stored in an airtight container in the fridge for up to a week or frozen for up to a month.
