  • 1/2 cup brown sugar Can substitute with honey or agave syrup
  • 1/4 cup apple cider vinegar Provides tanginess to the glaze
  • 1 tablespoon smoked paprika Adds smokiness to the glaze
  • 1 teaspoon garlic powder Enhances flavor
  • to taste Salt and pepper Adjust seasoning according to preference

Method
 

Preparation
  1. Wash the rhubarb thoroughly and chop it into 1-inch pieces.
  2. In a medium saucepan, combine the chopped rhubarb, brown sugar, apple cider vinegar, smoked paprika, and garlic powder.
  3. Place the saucepan over medium heat and stir until the sugar is dissolved. Allow to simmer for about 10-15 minutes, stirring occasionally, until the rhubarb softens.
  4. Use an immersion blender to blend the mixture until smooth. Alternatively, transfer to a regular blender and pulse until smooth.
  5. Add salt and pepper to taste, adjusting as necessary.
  6. Let the glaze cool slightly before using. It can be used immediately or stored for later.

Notes

Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months. Thaw and stir before use.
