- Toss in the sliced smoked sausage, ensuring it’s evenly distributed among the veggies.
- Drizzle the olive oil over the mixture. Then sprinkle in the garlic powder, paprika, salt, and pepper. Mix well.
- Transfer the mixture into a baking dish, spreading it out evenly.
Cooking
- Place the dish in the oven and bake for about 35-40 minutes, or until the potatoes are tender and golden brown. Toss the mixture halfway through.
Serving
- Remove from the oven and garnish with fresh parsley if desired, then serve hot!
Notes
For a lighter version, substitute smoked sausage with turkey sausage or veggie sausage. Add crushed red pepper flakes or herbs like thyme or rosemary for extra flavor.
