  • 1 pound smoked sausage, sliced
  • 2 pounds baby potatoes, halved
  • 1 medium onion, chopped
  • 2 pieces bell peppers (any color), diced
Seasoning and Oil
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved potatoes, chopped onion, and diced bell peppers.
  3. Toss in the sliced smoked sausage, ensuring it’s evenly distributed among the veggies.
  4. Drizzle the olive oil over the mixture. Then sprinkle in the garlic powder, paprika, salt, and pepper. Mix well.
  5. Transfer the mixture into a baking dish, spreading it out evenly.
Cooking
  1. Place the dish in the oven and bake for about 35-40 minutes, or until the potatoes are tender and golden brown. Toss the mixture halfway through.
Serving
  1. Remove from the oven and garnish with fresh parsley if desired, then serve hot!

Notes

For a lighter version, substitute smoked sausage with turkey sausage or veggie sausage. Add crushed red pepper flakes or herbs like thyme or rosemary for extra flavor.
