  • 2 cups mixed greens
  • 1/2 avocado, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons capers
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Preparation
  1. Wash and dry the mixed greens thoroughly.
  2. Dice the avocado, thinly slice the red onion, and halve the cherry tomatoes.
  3. In a large mixing bowl, combine the mixed greens, diced avocado, sliced onions, halved tomatoes, and capers.
  4. Tear the smoked salmon into bite-sized pieces and gently add it to the salad mix.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper to create a simple vinaigrette.
  6. Drizzle the dressing over the salad and gently toss to coat everything evenly, being careful not to break up the salmon too much.
  7. Plate the salad and enjoy, garnished with extra lemon wedges if desired.

Notes

This salad pairs beautifully with a light baguette or cucumber slices. For drinks, sparkling water with lemon or white wine is delightful. If using substitutes, grilled chicken or shrimp are great alternatives.
