  • 2 slices bread (your choice—whole wheat, sourdough, or gluten-free)
  • 1/4 cup yogurt (plain or Greek)

Preparation
  1. Start by boiling water in a medium-sized pot. Once boiling, gently add the eggs and let them cook for about 10-12 minutes.
  2. While the eggs are boiling, toast your bread slices in a toaster or on a skillet until golden brown and crispy.
  3. Once the eggs are done, cool them under cold running water. Peel and roughly chop them into a bowl.
  4. Use a fork to smash the eggs to your desired consistency; smooth or chunky is up to you!
  5. Add yogurt, salt, and pepper to the smashed eggs. Mix until you reach the perfect creamy texture.
  6. Spread the smashed egg mixture generously on your toasted bread and drizzle with olive oil and sprinkle fresh herbs if desired.
  7. Dig in immediately; enjoy the combination of textures and flavors fresh out of the kitchen!

Notes

For substitutions, try hummus or a spreadable cheese if you're out of yogurt. Timing is key; get your eggs boiling just before you start to toast your bread! Be careful not to overboil the eggs.
