Preparation
- Start by boiling water in a medium-sized pot. Once boiling, gently add the eggs and let them cook for about 10-12 minutes.
- While the eggs are boiling, toast your bread slices in a toaster or on a skillet until golden brown and crispy.
- Once the eggs are done, cool them under cold running water. Peel and roughly chop them into a bowl.
- Use a fork to smash the eggs to your desired consistency; smooth or chunky is up to you!
- Add yogurt, salt, and pepper to the smashed eggs. Mix until you reach the perfect creamy texture.
- Spread the smashed egg mixture generously on your toasted bread and drizzle with olive oil and sprinkle fresh herbs if desired.
- Dig in immediately; enjoy the combination of textures and flavors fresh out of the kitchen!
Notes
For substitutions, try hummus or a spreadable cheese if you're out of yogurt. Timing is key; get your eggs boiling just before you start to toast your bread! Be careful not to overboil the eggs.
