Ingredients
  

For the Tacos
  • 1 lb ground beef (80/20 blend) For juiciness
  • 8 small flour or corn tortillas Your choice of tortilla
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or your preference)
  • 1/2 cup diced onions Optional
  • to taste salt and pepper
  • to taste salsa or your favorite taco sauce
  • as needed cooking oil For the skillet

Method
 

Preparation
  1. Heat a large skillet or griddle over medium-high heat and add a light drizzle of cooking oil.
  2. Form the ground beef into equal-sized balls (about 2 ounces each).
  3. Place a beef ball in the hot skillet and smash it down to about 1/2 inch thick. Season generously with salt and pepper.
Cooking
  1. Cook the smashed burger for about 3-4 minutes until the edges are crispy and brown, then flip and cook for an additional 2-3 minutes until done.
  2. Warm the tortillas in another skillet or microwave while the burgers are cooking.
Assembly
  1. Place the cooked burger patty onto a warm tortilla.
  2. Top with shredded lettuce, diced tomatoes, cheese, onions, and a drizzle of salsa.
  3. Fold the tortilla around the fillings and serve.

Notes

Store any uneaten filling in an airtight container in the fridge for up to 3 days. Reheat the burger patties in a skillet over medium heat and warm the tortillas separately for the best taste.
