- Begin by dicing the onion, slicing the carrots, and dicing the potatoes. Mince the garlic cloves, and set everything aside.
Layering and Cooking
- Place the boneless chicken breasts at the bottom of your slow cooker. Sprinkle the diced onion, sliced carrots, and diced potatoes over the chicken.
- Sauté minced garlic in a small pan until fragrant, then add it to the slow cooker along with the Italian seasoning, salt, and pepper. Pour the chicken broth over everything.

Notes
For lighter options, substitute half-and-half for heavy cream. Diced turkey breast can also be used instead of chicken. Store in an airtight container for up to 4 days in the refrigerator or freeze for up to three months.
