  • 2 lbs chicken thighs or breasts Cut into uniform pieces
  • 1 cup peanut butter
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • to taste salt and pepper
  • chopped green onions for garnish
  • cooked rice for serving

Method
 

Preparation
  1. Lightly grease your slow cooker with cooking spray or olive oil to prevent sticking.
  2. In a mixing bowl, combine the peanut butter, soy sauce, honey, rice vinegar, minced garlic, and fresh ginger. Stir until smooth and well-blended.
  3. Place the chicken thighs or breasts in the slow cooker. Pour the peanut sauce mixture over the chicken, ensuring it is evenly coated.
  4. Cover the slow cooker and set it on low for 6-7 hours or high for 3-4 hours, until the chicken is tender enough to shred easily.
Serving
  1. Once cooked, taste for seasoning and add salt and pepper as desired. Serve over rice and garnish with chopped green onions.

Notes

For best results, let it cook on low. If you prefer a different protein, you can use Halal-certified turkey or tofu for a vegetarian option. Mix the sauce thoroughly before adding it to ensure all pieces are well-coated.
