  • 4 pieces boneless chicken thighs (skinless) Ensure adherence to halal standards
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 piece onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 tablespoons Dijon mustard Can substitute with yellow mustard if needed
  • 1 tablespoon whole grain mustard
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup heavy cream
  • Salt and pepper (to taste)
  • Chopped parsley (for garnish)

Method
 

Preparation
  1. Season the chicken thighs with salt and pepper on both sides.
  2. Place the seasoned chicken at the bottom of your slow cooker. Add the chopped onion and minced garlic on top.
  3. In a bowl, combine the Dijon mustard, whole grain mustard, chicken broth, thyme, and rosemary. Pour this mixture over the chicken, ensuring it is well covered.
Cooking
  1. Cover and cook on low for about 4 to 5 hours or on high for 2 to 3 hours. The chicken should be tender and cooked through.
  2. About 30 minutes before serving, stir in the orzo pasta with the cream. Add a splash more chicken broth if needed. Allow it to cook until the orzo is tender.
  3. Once everything is cooked, taste and adjust seasoning as needed. Garnish with chopped parsley before serving.

Notes

For optimal flavor, allow the dish to cook slowly. Avoid adding the orzo too early to prevent mushiness. Store leftovers in an airtight container for up to 3 days.
