  • 1.5 lbs beef, cut into bite-sized pieces Use chuck roast for better flavor.
  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 6 cloves garlic, minced
  • 1 tsp dried thyme
  • to taste Salt and pepper Adjust according to preference.
  • to taste Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Cut the beef into bite-sized pieces and halve the baby potatoes. Set both aside.
Making Garlic Butter
  1. In a small saucepan, melt the butter over low heat. Add the minced garlic, dried thyme, salt, and pepper. Stir until well combined.
Combining the Ingredients
  1. Place the beef bites and potato halves into the slow cooker. Pour the garlic butter mixture over them, stirring gently to coat.
Cooking
  1. Cover the slow cooker and cook on low for 6-8 hours or on high for 4 hours, until the beef is tender.
Serving
  1. Garnish with fresh parsley just before serving for a vibrant touch!

Notes

For a complete meal, serve with a fresh mixed greens salad and crusty bread. Can add other veggies like carrots or bell peppers for extra color and nutrition.
