  • 4 pieces boneless, skinless chicken breasts Use Halal-certified chicken if necessary.
  • 1 can cream of chicken soup Can be replaced with homemade blended white beans for a healthier option.
  • 1 cup chicken broth Use Halal-certified broth if necessary.
  • 1 packet ranch seasoning mix Essential for flavor.
  • 1 cup broccoli florets Can float during cooking.
  • 1 cup cooked rice Optional; add in the last 30 minutes of cooking.
  • to taste Salt and pepper Adjust according to preference.

Method
 

Preparation
  1. Begin by spraying the inside of your slow cooker with cooking spray or lightly greasing it.
  2. Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
  3. In a separate bowl, mix together the cream of chicken soup, chicken broth, ranch seasoning mix, salt, and pepper until well blended. Pour this mixture over the chicken.
  4. Gently add the broccoli florets on top of the chicken.
Cooking
  1. Cover the slow cooker, set it on low, and let it cook for 6-7 hours. Alternatively, set it to high for about 3-4 hours.
  2. If using cooked rice, add it in the last 30 minutes of cooking.
Serving
  1. After cooking, shred the chicken with two forks directly in the slow cooker. Stir everything together and serve warm.

Notes

Store leftovers in an airtight container for up to 4 days, or freeze for 2-3 months. Thaw overnight in the fridge and reheat gently.
