  • 6 pieces chicken thighs (bone-in, skin-on or skinless) For the best flavor.
  • 2 tablespoons olive oil For searing.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons honey (optional for sweetness) Add for extra flavor.

Method
 

Preparation
  1. Pat the chicken thighs dry with paper towels.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken thighs for about 3-4 minutes on each side until golden brown.
Cooking
  1. In the slow cooker, place the chopped onion and minced garlic.
  2. Add the seared chicken thighs on top.
  3. Sprinkle paprika, thyme, salt, and pepper over the chicken.
  4. Pour chicken broth, soy sauce, and honey (if using) over the top.
  5. Cover the slow cooker, set it to low for 6-7 hours or high for 3-4 hours.
Serving
  1. Remove the chicken from the slow cooker and serve it with the rich broth drizzling over it.

Notes

For extra flavor, consider topping the chicken with fresh herbs or crispy bacon bits before serving. Chicken thighs yield better moisture than breasts, making them the ideal choice for this recipe.
