  • 4 medium carrots, chopped
  • 3 medium potatoes, diced
  • 2 stalks celery, sliced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme Fresh herbs can be used for added flavor.
  • 1 teaspoon dried rosemary Consider adding fresh herbs before serving.
  • Salt and pepper to taste

Preparation
  1. Start by chopping up the carrots, potatoes, celery, and onion. Mince the garlic and set everything aside.
  2. In your slow cooker, begin by placing the chicken thighs at the bottom. Layer the chopped vegetables over the chicken.
  3. Pour the chicken broth over the layers, making sure everything is covered. Sprinkle in the thyme, rosemary, salt, and pepper.
Cooking
  1. Set your slow cooker to low for 6-8 hours, or high for 3-4 hours. Allow the ingredients to meld together and create that magical stew.
  2. About 30 minutes before serving, take the chicken out and shred it with two forks, then return it to the slow cooker. Stir to combine and let it heat through.
