Preparation
- Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
- Layer the sliced carrots, diced potatoes, and frozen peas over the chicken.
- Scatter the chopped onion on top for added flavor.

Cooking
- Cover and cook on low for 6-8 hours or on high for about 3-4 hours, until the chicken is thoroughly cooked and the veggies are tender.
- About an hour before serving, prepare your pie crust or biscuit dough according to package instructions.
- Once cooking is complete, gently shred the chicken within the slow cooker and layer your prepared crust on top.
- In the last 30 minutes, cover the dish and return it to the slow cooker to let the crust bake through until golden brown.
