  • 1 lb boneless, skinless chicken breasts Ensure the chicken is Halal-compliant.
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 1 cup frozen peas
  • 1/2 cup onion, chopped
  • 1 can (10.5 oz) cream of chicken soup Can be substituted with a homemade sauce.
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp thyme Fresh herbs can enhance flavor.
  • to taste Salt and pepper

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Layer the sliced carrots, diced potatoes, and frozen peas over the chicken.
  3. Scatter the chopped onion on top for added flavor.
  4. In a mixing bowl, combine the cream of chicken soup, chicken broth, garlic powder, thyme, salt, and pepper. Mix well until blended.
  5. Pour the soup mixture over the layered veggies and chicken in the slow cooker. Gently stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for about 3-4 hours, until the chicken is thoroughly cooked and the veggies are tender.
  2. About an hour before serving, prepare your pie crust or biscuit dough according to package instructions.
  3. Once cooking is complete, gently shred the chicken within the slow cooker and layer your prepared crust on top.
  4. In the last 30 minutes, cover the dish and return it to the slow cooker to let the crust bake through until golden brown.

Notes

To store, let the dish cool completely before transferring it to an airtight container. Refrigerate for up to 3-4 days or freeze for up to 2 months. Reheat in an oven set at 350°F until heated through.
