  • 1 lb halal chicken breast, diced
  • 1 cup halal chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 1 piece bell pepper (red, green, or yellow), chopped
  • 1 piece onion, diced
  • 2 stalks celery, diced
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 2 cups chicken broth (halal)
Spices and Seasoning
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
Garnish
  • Fresh parsley (for garnish)

Method
 

Preparation
  1. Start by dicing the chicken and sausage, and chopping the bell pepper, onion, and celery.
Layering
  1. In a slow cooker, begin with the diced chicken at the bottom.
  2. Next, layer in the sliced sausage, bell pepper, onion, and celery.
Adding Flavor
  1. Pour in the entire can of diced tomatoes with the juices, and add the rice on top.
  2. Sprinkle the Cajun seasoning, garlic powder, onion powder, salt, and pepper evenly over the top.
Cooking
  1. Lastly, pour the chicken broth over everything in the slow cooker, ensuring the rice is submerged.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours.
Finishing Touch
  1. Once cooked, stir everything together, garnish with fresh parsley, and serve warm.

Notes

For perfect results, avoid lifting the lid during cooking. If you can't find halal chicken sausage, feel free to use extra chicken or another halal sausage option. To prevent mushy rice, make sure to measure your liquid correctly.
