  • 1 lb boneless, skinless chicken breasts For a tender texture
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme Fresh thyme can be substituted for enhanced flavor.
  • 1 teaspoon dried basil Fresh basil can be used if available.
  • to taste Salt and pepper Adjust seasoning to preference.
  • 16 oz potato gnocchi
  • 1 cup heavy cream Adds creaminess to the soup.
  • 2 cups fresh spinach Add at the end for vibrant color and nutrition.

Preparation
  1. Chop the onion, dice the carrots and celery, and mince the garlic.
Cooking
  1. Place the boneless, skinless chicken breasts at the bottom of the slow cooker.
  2. Layer the chopped onion, diced carrots, diced celery, and minced garlic over the chicken.
  3. Pour in the chicken broth, and sprinkle in the dried thyme, basil, salt, and pepper.
  4. Cover and cook on low for 6 hours or high for 3 hours until the chicken is cooked through and tender.
  5. Remove the chicken breasts, shred them using two forks, and return to the pot.
  6. Stir in the potato gnocchi and heavy cream, allowing everything to heat through for an additional 30 minutes on high.
  7. Finally, stir in the fresh spinach until wilted.
Serving
  1. Ladle the soup into bowls, top with your favorite garnishes, and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat gently on medium heat, adding a splash of broth or water to maintain creaminess.
