- Start by chopping the onion and garlic and slicing the bell pepper.
- In your slow cooker, add the chopped onion, minced garlic, and sliced bell pepper. Spread them evenly at the bottom.
- Place the skinless, boneless chicken thighs on top of the vegetables.
- Pour in the diced tomatoes with their juices and the chicken broth.
- Sprinkle the oregano, basil, salt, and pepper over the top. Give it a gentle stir to combine.
- Cover the slow cooker and set it to low for 6-8 hours.
- Once cooked, garnish with fresh parsley and serve hot.
Notes
Tip: Feel free to swap out the vegetables based on what you have on hand. Cooking for longer on low will yield even more tender chicken.
