  • 4 thighs 4 chicken thighs, skinless and boneless
  • 1 1 onion, chopped
  • 2 cloves 2 cloves garlic, minced
  • 1 1 bell pepper, sliced
  • 14 oz 1 can (14 oz) diced tomatoes
  • 1 cup 1 cup chicken broth
  • 1 teaspoon 1 teaspoon dried oregano
  • 1 teaspoon 1 teaspoon dried basil
  • to taste Salt and pepper to taste
  • Fresh parsley, for garnish

Method
 

Preparation
  1. Start by chopping the onion and garlic and slicing the bell pepper.
  2. In your slow cooker, add the chopped onion, minced garlic, and sliced bell pepper. Spread them evenly at the bottom.
  3. Place the skinless, boneless chicken thighs on top of the vegetables.
  4. Pour in the diced tomatoes with their juices and the chicken broth.
  5. Sprinkle the oregano, basil, salt, and pepper over the top. Give it a gentle stir to combine.
  6. Cover the slow cooker and set it to low for 6-8 hours.
  7. Once cooked, garnish with fresh parsley and serve hot.

Notes

Tip: Feel free to swap out the vegetables based on what you have on hand. Cooking for longer on low will yield even more tender chicken.
