  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup wild rice, rinsed Make sure the wild rice is rinsed thoroughly.
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Ensure it’s halal-compliant.
  • 1 cup milk or cream Substitute with a plant-based alternative if preferred.
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for garnish fresh parsley Adds a burst of flavor and color.

Method
 

Preparation
  1. Make sure to cook your chicken if it’s not already prepared.
  2. In your slow cooker, toss in the shredded chicken, rinsed wild rice, diced onion, carrots, and celery.
  3. Pour in the chicken broth until all ingredients are covered.
  4. Sprinkle in garlic powder, salt, and pepper. Stir to combine.
  5. Cover and set your cooker on low for 6 to 8 hours or on high for 3 to 4 hours.
  6. About 30 minutes before serving, stir in the milk or cream and taste. Adjust seasoning if needed.
  7. Top with freshly chopped parsley before serving.

Notes

Consider using skim milk or a plant-based milk alternative for lower calories. Ensure wild rice is rinsed thoroughly to remove grit. If your soup gets too thick, add a bit more broth or water.
