  • 2 cups green beans, trimmed Fresh or frozen, depending on what you have on hand.
  • 1 piece onion, sliced For that lovely aromatic base.
  • 3 cloves garlic, minced The secret ingredient for flavor!
  • 1 cup chicken broth Use low-sodium for a healthier option.
  • 1 teaspoon thyme Fresh or dried, it will enhance the dish beautifully.
  • to taste none Salt and pepper The finishing touch to elevate all those flavors!

Preparation
  1. Begin by spraying the inside of your slow cooker with cooking spray or lightly greasing it.
  2. Start by placing the sliced onions at the bottom of the slow cooker. This will create a delicious base for your dish.
  3. Season the chicken with salt, pepper, and thyme. Place the seasoned chicken on top of the onions.
  4. Scatter the diced potatoes over the chicken, ensuring they’re evenly distributed.
  5. Next, add the trimmed green beans on top of the potatoes.
  6. Sprinkle the minced garlic over everything and pour in the chicken broth for added moisture.
  7. Cover and cook on low for 6-7 hours or high for 4-5 hours until the chicken is thoroughly cooked and the vegetables are tender.
  8. Once cooked, give everything a gentle stir before serving, and enjoy your delicious creation!

Notes

Have leftovers? Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. You can freeze it for up to 3 months. When reheating, do so gently in the microwave or back on the stovetop with a splash of chicken broth to keep everything moist and delicious.
