Preparation
  1. Start by rinsing the red beans thoroughly under cold water. Chop the onion, bell pepper, and celery into bite-sized pieces.
Layering
  1. In your slow cooker, add the rinsed beans, chopped onion, bell pepper, celery, and minced garlic.
Seasoning and Cooking
  1. Sprinkle the Cajun seasoning over the top, followed by salt and pepper to taste.
  2. Pour in the chicken broth, ensuring the beans are fully submerged. Toss in the bay leaf for added flavor.
  3. Cover the slow cooker and set it to cook on low for 6 to 8 hours, or on high for 4 to 5 hours. You'll know it's ready when the beans are tender and luscious.
Serving
  1. Once cooked, remove the bay leaf and taste for seasoning. Serve the Cajun red beans over fluffy cooked rice and garnish with chopped green onions.

Notes

For best results, consider soaking beans overnight. This dish can be made vegetarian by replacing chicken broth with vegetable broth.
