Preparation
- Rinse the beef chuck roast and pat it dry. Season with salt and pepper to taste. Dice the onion and mince the garlic.
Cooking
- In your slow cooker, place the beef chuck at the bottom. Sprinkle the diced onion and minced garlic over the meat. Pour the taco seasoning evenly on top, followed by the beef broth.
- Cover the slow cooker and set it on low for about 8 hours, or on high for about 4 hours if you're short on time.
Finishing Up
- Once done, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the remaining juices.
- Heat the corn tortillas on a skillet for a few seconds until warm. Fill each tortilla with the flavorful beef mixture, adding your favorite toppings.
Notes
For substitutions, flank steak or brisket can work beautifully. Do not rush the slow cooking process to ensure the beef is tender. Avoid adding too much liquid; stick with one cup of beef broth.
