- Start by chopping the onion, garlic, carrots, and potatoes. Make sure everything is ready to go—this dish deserves your full attention!
- Generously season your beef roast with salt and pepper. Feel free to add herbs or spices you love—like a little paprika for heat!
- For a deeper flavor (this is optional but highly recommended), heat a skillet over medium-high heat and sear the roast on all sides until it’s golden brown.
Cooking
- Place the seared roast in your slow cooker. Add the chopped onions, garlic, carrots, and potatoes around the beef.
- Pour in the beef broth, Worcestershire sauce, and sprinkle the thyme over the top.
- Cover with the lid and set your slow cooker to LOW for 8 hours.
- Once cooked, shred the beef with two forks and serve it with the veggies and broth. Don’t forget to garnish with fresh herbs if you have them!
