Preparation
- Start by chopping the onion and mincing the garlic.
- Season the beef generously with salt and pepper on all sides.
- Place chopped onions at the bottom of the slow cooker and place the seasoned beef on top.
- In a bowl, mix together lime juice, apple cider vinegar, minced garlic, cumin, oregano, and chipotle peppers. Pour this mixture over the beef.
Cooking
- Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is fork-tender.
- Once cooked, remove the beef, shred using two forks, and mix it back into the sauce. Serve warm!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat on the stove or microwave.
