Method
Preparation
- Dice the potatoes, onion, and bell pepper. Set them aside.
Cooking
- Heat a large skillet over medium heat and add a tablespoon of olive oil.
- Add the diced potatoes, season with salt and pepper, and cook until they are golden brown and tender, about 10-12 minutes. Stir occasionally to avoid sticking.
- Push the potatoes to one side of the skillet. In the other side, add the onions and bell peppers. Sauté for about 2-3 minutes until they soften.
- Add the ground beef (or turkey) and cook until browned, breaking it up with a spatula. Add garlic powder, Worcestershire sauce, and tomato sauce.
- Mix everything together in the skillet and let it simmer for an additional 5 minutes to meld the flavors.
- Sprinkle the shredded cheddar cheese on top and cover the skillet. Let it cook for another minute or two until the cheese melts.
Serving
- Remove from heat, garnish with fresh chopped green onions, and serve warm.
Notes
To serve, consider adding a refreshing salad or homemade coleslaw for a crunch. Garlic bread pairs well to soak up the flavors.
