Ingredients
  

Meat and Sauce
  • 1 lb ground beef Can be substituted with ground turkey or chicken.
  • 1 medium onion, chopped
  • 1 can Sloppy Joe sauce
Cornbread Topping
  • 2 cups cornbread mix Feel free to use cornbread mix with jalapeños or cheese for extra flavor.
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese Different cheese types can be used, like pepper jack for spice.
Seasoning
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and the onion is tender. Drain any excess fat if necessary.
  3. Stir in the can of Sloppy Joe sauce and let it simmer for about 5 minutes.
Cornbread Mixture
  1. In a separate bowl, combine the cornbread mix, milk, and egg. Stir until just combined; do not overmix.
Assembling Casserole
  1. Spread half of the cornbread batter into a greased baking dish.
  2. Pour the Sloppy Joe mixture evenly over the batter.
  3. Spread the remaining cornbread batter on top.
  4. Sprinkle shredded cheddar cheese over the casserole.
Baking
  1. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cornbread is golden brown.
  2. Allow it to cool for a few minutes before serving.

Notes

For additional flavor, top with hot sauce or sour cream. To store leftovers, place in an airtight container in the refrigerator for 3-4 days. For freezing, wrap tightly and it can be stored for up to 3 months.
