Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, add the ground beef and chopped onion. Cook until the meat is browned and the onion is tender. Drain any excess fat if necessary.
- Stir in the can of Sloppy Joe sauce and let it simmer for about 5 minutes.
Cornbread Mixture
- In a separate bowl, combine the cornbread mix, milk, and egg. Stir until just combined; do not overmix.
Assembling Casserole
- Spread half of the cornbread batter into a greased baking dish.
- Pour the Sloppy Joe mixture evenly over the batter.
- Spread the remaining cornbread batter on top.
- Sprinkle shredded cheddar cheese over the casserole.
Baking
- Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the cornbread is golden brown.
- Allow it to cool for a few minutes before serving.
Notes
For additional flavor, top with hot sauce or sour cream. To store leftovers, place in an airtight container in the refrigerator for 3-4 days. For freezing, wrap tightly and it can be stored for up to 3 months.
