  • 2 cups cooked, shredded chicken
  • 1 cup plain Greek yogurt
  • 1 cup low-fat cottage cheese
  • 1 cup diced tomatoes
  • 1 cup diced avocados
  • 1 cup shredded low-fat cheese Divided for topping
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
Optional Ingredients
  • 1 cup whole wheat pasta Optional, cooked according to package instructions
  • Cooking spray or olive oil For greasing the casserole dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a casserole dish with cooking spray or olive oil.
  3. In a large mixing bowl, combine the shredded chicken, Greek yogurt, cottage cheese, diced tomatoes, diced avocados, half of the shredded cheese, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  4. If using whole wheat pasta, cook it according to package instructions, then fold it into the mixture.
  5. Pour the mixture into the prepared casserole dish and spread it evenly.
  6. Sprinkle the remaining shredded cheese on top.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes until heated through and the cheese is bubbly and golden.
  2. Allow to cool slightly before serving.

Notes

For a vegetarian option, substitute chicken with turkey or cooked quinoa. Consider adding jalapeños for a kick or fresh cilantro for additional flavor. Store leftovers in an airtight container for up to 3-4 days or freeze for up to 3 months.
