  • 1 pound chicken breast, diced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth (halal-friendly)
  • 12 oz potato gnocchi
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

  1. In a large skillet over medium heat, add the olive oil. Once it's hot, add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, until the chicken is golden and cooked through. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Keep a close eye on it—garlic can go from perfect to burnt in no time!
  3. Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a simmer, then add in the Italian seasoning. Let it bubble gently for about 2-3 minutes to thicken slightly.
  4. Add the gnocchi to the skillet and cook according to the package instructions, usually around 2-3 minutes if using store-bought. Stir occasionally.
  5. Return the cooked chicken to the skillet and stir in the Parmesan cheese until melted and creamy. Let everything simmer together for another minute, then taste and adjust seasoning as preferred.
  6. Remove from heat and garnish with fresh parsley. Serve hot and enjoy!

Notes

Substitutions: You can swap chicken for shrimp or make it vegetarian with sautéed mushrooms or spinach. Timing: Monitor gnocchi closely while boiling; they're done when they float. Avoid high heat to prevent separation of the sauce.
