  • 3 pieces ripe bananas Make sure they are well-ripened for optimal sweetness.
  • 1 cup all-purpose flour For that perfect batter texture.

  • 1/4 teaspoon salt Just enough to enhance the flavors.
  • 1/3 cup sugar Adds sweetness, but you can adjust based on preference.
  • 1/2 teaspoon vanilla extract A hint of vanilla makes everything better!
  • Oil for frying Choose your favorite; vegetable or canola oil works great.

Preparation
  1. In a bowl, use a fork to mash the ripe bananas until they are smooth with just a few lumps.
  2. In a separate bowl, combine the flour, baking powder, salt, and sugar. Whisk until well blended.
  3. Slowly add the dry mixture to the mashed bananas, mixing thoroughly until a thick batter forms. Stir in the vanilla extract.
  4. In a large skillet, pour in enough oil to cover the bottom. Heat it over medium heat until hot.
Cooking
  1. Using a tablespoon, scoop some of the batter and carefully drop it into the hot oil. Fry each fritter for about 3-4 minutes, or until golden brown on both sides.
  2. Place cooked fritters on paper towels to absorb excess oil.
  3. Sprinkle with powdered sugar or serve with honey for a little extra sweetness!

Notes

Serve with a dollop of whipped cream or a scoop of vanilla ice cream. Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze un-fried batter shaped into fritters for up to 3 months.
