  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar You can also use brown sugar for a richer flavor.
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter into the mashed bananas until combined.
  4. Sprinkle the baking soda and salt over the mixture, and mix in.
  5. Mix in the sugar, beaten egg, and vanilla extract.
  6. Gradually add the flour and mix until just incorporated. Avoid over-mixing.
  7. Transfer the batter into a greased 4×8 inch loaf pan.
  8. Place in the oven and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For added richness, consider adding walnuts, chocolate chips, or a hint of cinnamon. Store wrapped at room temperature for up to 3 days or refrigerate for up to a week. Freeze slices for up to 2 months.
