Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir in the melted butter into the mashed bananas until combined.
- Sprinkle the baking soda and salt over the mixture, and mix in.
- Mix in the sugar, beaten egg, and vanilla extract.
- Gradually add the flour and mix until just incorporated. Avoid over-mixing.
- Transfer the batter into a greased 4×8 inch loaf pan.
- Place in the oven and bake for about 60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
Notes
For added richness, consider adding walnuts, chocolate chips, or a hint of cinnamon. Store wrapped at room temperature for up to 3 days or refrigerate for up to a week. Freeze slices for up to 2 months.
