Main Ingredients
  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 cup refried beans Heat gently before spreading.
  • 1 cup salsa Choose your favorite brand for flavor.
  • 1 cup shredded cheese (cheddar or Mexican blend) For melting and flavor enhancement.
  • 4 large flour tortillas Large size for easy rolling.
  • 1/2 cup sour cream For serving on top.
  • 1/4 cup chopped green onions For garnish.
  • 1 tablespoon olive oil For frying the burritos.
  • to taste cumin, garlic powder, salt, pepper Spices to season the chicken.

Method
 

Preparation
  1. If you don't have pre-cooked chicken, boil or pan-fry chicken breast until cooked through and shred it.
  2. Gently heat the refried beans in a small saucepan over low-medium heat.
Assembly
  1. Lay tortillas on a surface. Spread 1/4 cup refried beans on each, then add shredded chicken.
  2. Add a tablespoon of salsa on each tortilla and sprinkle with cheese.
  3. Fold in the sides of each tortilla and roll from the bottom up.
Cooking
  1. Heat olive oil in a skillet over medium heat. Cook each burrito seam side down for 3-4 minutes until golden brown.
  2. After cooking, place the burritos on a serving plate and smother with additional salsa, cheese, and sour cream.
Serving
  1. Garnish with chopped green onions before serving warm with extra salsa.

Notes

Store leftovers in an airtight container for up to 3 days. They can be frozen for 3 months.
