Preparation
- If you don't have pre-cooked chicken, boil or pan-fry chicken breast until cooked through and shred it.
- Gently heat the refried beans in a small saucepan over low-medium heat.
Assembly
- Lay tortillas on a surface. Spread 1/4 cup refried beans on each, then add shredded chicken.
- Add a tablespoon of salsa on each tortilla and sprinkle with cheese.
- Fold in the sides of each tortilla and roll from the bottom up.
Cooking
- Heat olive oil in a skillet over medium heat. Cook each burrito seam side down for 3-4 minutes until golden brown.
- After cooking, place the burritos on a serving plate and smother with additional salsa, cheese, and sour cream.
Serving
- Garnish with chopped green onions before serving warm with extra salsa.
Notes
Store leftovers in an airtight container for up to 3 days. They can be frozen for 3 months.
