Preparation
- In a large pot over medium heat, add a splash of water or a tablespoon of olive oil.
- Add the chopped onions, carrots, and celery. Cook, stirring occasionally, until the vegetables soften, about 5-7 minutes.
- Add the minced garlic in the last minute to release its fragrant aroma.
Cooking
- Pour in the 4 cups of chicken broth and bring it to a gentle boil.
- Add in the bay leaf, dried thyme, salt, and pepper to taste.
- Reduce the heat to low, and add the shredded chicken and cooked rice to the pot. Stir well to combine everything.
- Allow the soup to simmer on low for about 15-20 minutes.
Serving
- Check the seasoning one last time and adjust salt and pepper as needed.
- Remove the bay leaf before serving.
- Ladle the soup into bowls and consider adding your favorite toppings, like fresh herbs or a squeeze of lemon juice.
Notes
Store in the fridge for up to 3-4 days or freeze for up to 3 months. Reheat gently on the stovetop or microwave, adding a splash of water or broth if needed.
