  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 large egg
  • 2 cloves garlic, minced

For the Rice and Sauce
  • 1 cup rice
  • 2 cups beef broth
  • 1 cup marinara sauce

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, grated Parmesan cheese, chopped parsley, egg, minced garlic, salt, and pepper. Mix thoroughly until well incorporated.
  3. Shape the mixture into small meatballs, about 1-inch in diameter, and place them on a baking sheet lined with parchment paper.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until browned and cooked through.
  2. While the meatballs are baking, prepare the rice. In a saucepan, bring the beef broth to a boil and add the rice. Reduce heat, cover, and simmer according to package instructions until fluffy.
Serving
