  • 1 cup Bread crumbs (preferably Italian-seasoned)
  • 1 cup Shredded mozzarella cheese For that melty surprise
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 1/2 cup Onion, finely chopped
  • 1 large Egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper To taste

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, combine the ground chicken, bread crumbs, half of the mozzarella cheese, parsley, garlic, onion, egg, Italian seasoning, salt, and pepper. Mix everything together until well incorporated.
  3. Use your hands to form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet. Leave a little space between them for even cooking.
  4. Once all the meatballs are shaped, use your finger to create a small indent on the top of each meatball. Fill each indent with a teaspoon of shredded mozzarella, then cover it back with the rest of the meat to seal.
  5. Drizzle a bit of olive oil over the meatballs for extra crispiness and bake in the preheated oven for about 20-25 minutes or until they are golden brown and cooked through.
  6. Enjoy these delicious meatballs on their own, in marinara sauce, or on a sub with additional toppings!
