Preparation
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, combine the ground chicken, bread crumbs, half of the mozzarella cheese, parsley, garlic, onion, egg, Italian seasoning, salt, and pepper. Mix everything together until well incorporated.
- Use your hands to form small meatballs (about 1 inch in diameter) and place them on the prepared baking sheet. Leave a little space between them for even cooking.
- Once all the meatballs are shaped, use your finger to create a small indent on the top of each meatball. Fill each indent with a teaspoon of shredded mozzarella, then cover it back with the rest of the meat to seal.
- Drizzle a bit of olive oil over the meatballs for extra crispiness and bake in the preheated oven for about 20-25 minutes or until they are golden brown and cooked through.
- Enjoy these delicious meatballs on their own, in marinara sauce, or on a sub with additional toppings!
