Ingredients
  

For the Marinade
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the Skewers
  • 1 pound large shrimp, peeled and deveined Use the freshest shrimp available.
  • Fresh parsley, for garnish
  • Skewers (wooden or metal) Soak wooden skewers in water for 15-20 minutes to prevent burning.

Preparation
  1. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Add the shrimp to the bowl, ensuring they are well coated in the marinade. Cover and let them marinate for at least 15 minutes.
  2. If you’re using wooden skewers, soak them in water for 15-20 minutes to prevent burning on the grill. For metal skewers, you can skip this step!
Grilling
  1. Thread the marinated shrimp onto the skewers. You can add cherry tomatoes, bell peppers, or onion pieces between the shrimp for added variety and flavor.
  2. Preheat your grill to medium-high heat.
  3. Place the shrimp skewers on the grill and cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
Serving
  1. Remove the skewers from the grill, garnish with fresh parsley, and serve with lemon wedges.

Notes

Pair with a fresh cucumber and tomato salad, zesty rice pilaf, or dipping sauces like lemon garlic aioli or sweet chili sauce.
