Ingredients

Main Ingredients
  • 1 pound shrimp, peeled and deveined Fresh is preferred, but frozen works too.
  • 8 ounces linguine or spaghetti Cook according to package instructions.
  • 4 tablespoons butter Melted for sautéing garlic and shrimp.
  • 4 cloves garlic, minced Adds rich flavor.
  • 1/2 cup white wine or chicken broth Use chicken broth if you don't have white wine.
  • 1/4 cup fresh parsley, chopped For added freshness and flavor.
  • Salt and pepper to taste Adjust to your preference.
  • Lemon wedges for serving For an extra zesty finish.

Method

Cooking
  1. Begin by cooking the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Once it's melted, add the minced garlic and sauté for about a minute until fragrant.
  3. Toss in the shrimp and cook until they turn pink, which should take around 2-3 minutes.
  4. Pour in the white wine (or chicken broth) and let it simmer for about 2 minutes to reduce slightly.
  5. Add the drained pasta to the skillet alongside the chopped parsley. Toss everything together, seasoning with salt and pepper to taste.
  6. Plate your Shrimp Scampi and serve immediately with lemon wedges on the side for that extra zest!

Notes

Shrimp Scampi is best enjoyed fresh but can last for up to 2 days in the fridge. Reheat gently on the stovetop over low heat to avoid overcooking.
