  • 1 lb large shrimp, peeled and deveined
  • 1/2 cup fresh breadcrumbs (ideally homemade)
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried oregano)
  • 1 whole lemon, zested and juiced
  • to taste salt and pepper
  • to taste Grated Parmesan cheese (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss the shrimp with salt, pepper, and lemon juice. Lay the shrimp in a single layer on a baking dish.
  3. In a separate bowl, combine breadcrumbs, olive oil, minced garlic, parsley, oregano, and lemon zest. Mix until breadcrumbs are evenly coated.
Cooking
  1. Spoon the breadcrumb mixture over the shrimp, ensuring each piece is covered generously.
  2. Place the dish in the oven and bake for 15-20 minutes, or until the shrimp are opaque and the topping is golden brown.
  3. Once done, remove from the oven and let it cool for a few minutes before serving. Garnish with extra parsley if desired.

Notes

For an extra kick, add a touch of paprika or red pepper flakes to the topping. Substitute fresh herbs with dried ones using one-third the amount.
