  • 1 pound shrimp, peeled and deveined
  • 1 cup cooked rice
  • 1 cup cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup milk
Seasonings and Toppings
  • 1/2 cup breadcrumbs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shrimp, cooked rice, cream of mushroom soup, milk, cheese, garlic powder, and onion powder. Mix well and season with salt and pepper.
  3. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  4. Sprinkle breadcrumbs on top of the mixture for a delightful crunch.
  5. Place the casserole in the oven and bake for 25-30 minutes or until the shrimp is cooked through and the top is golden brown.
  6. Once out of the oven, let it cool for a few minutes, then garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) for about 15-20 minutes until warmed through. You can freeze individual portions for later, just thaw overnight in the refrigerator before reheating.
