  • 1 pound Shrimp, peeled and deveined
  • 1 bunch Asparagus, ends trimmed and cut into 1-2 inch pieces
  • 1 cup Mushrooms, sliced (button or shiitake)
Aromatics
  • 3 cloves Garlic, minced
  • 1 inch piece Ginger, grated
Sauce and Oils
  • 3 tablespoons Soy Sauce, Halal-certified
  • 1 tablespoon Sesame Oil
  • 2 tablespoons Vegetable Oil, for sautéing
Seasoning
  • Salt and Pepper, to taste
  • Chili Flakes, optional For those who enjoy a little heat
  • Sesame Seeds, optional For garnish

Method
 

Preparation
  1. Start by washing and chopping the asparagus and mushrooms. Mince the garlic and grate the ginger so they’re ready to go.
Cooking
  1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
  2. Add the shrimp to the hot oil. Cook for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.
  3. In the same pan, add the asparagus and mushrooms. Stir-fry for about 4-5 minutes until tender-crisp.
  4. Toss in the garlic and ginger, stirring for about 1 minute until fragrant.
  5. Return the shrimp to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for another 1-2 minutes. Season with salt, pepper, and chili flakes if using.
  6. Remove from heat, garnish with sesame seeds if desired, and serve hot.

Notes

Shrimp can be substituted with chicken or beef, ensure they are Halal-certified. Keep a close eye on shrimp to avoid overcooking. Feel free to add other vegetables like bell peppers or snap peas for variety.
