Preparation
- Start by washing and chopping the asparagus and mushrooms. Mince the garlic and grate the ginger so they’re ready to go.
Cooking
- In a large skillet or wok, heat the vegetable oil over medium-high heat.
- Add the shrimp to the hot oil. Cook for about 2-3 minutes until they turn pink. Remove the shrimp from the pan and set aside.
- In the same pan, add the asparagus and mushrooms. Stir-fry for about 4-5 minutes until tender-crisp.
- Toss in the garlic and ginger, stirring for about 1 minute until fragrant.
- Return the shrimp to the skillet. Pour in the soy sauce and sesame oil, stirring well to combine. Cook for another 1-2 minutes. Season with salt, pepper, and chili flakes if using.
- Remove from heat, garnish with sesame seeds if desired, and serve hot.
Notes
Shrimp can be substituted with chicken or beef, ensure they are Halal-certified. Keep a close eye on shrimp to avoid overcooking. Feel free to add other vegetables like bell peppers or snap peas for variety.
