Ingredients

Main Ingredients
  • 1 lb shrimp (peeled and deveined)
  • 1 bunch asparagus (trimmed and cut into 2-inch pieces)
  • 8 oz mushrooms (sliced)
  • 2 cloves garlic (minced)
Sauces and Oils
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp vegetable oil
  • 1 tsp sesame oil
Seasoning
  • to taste salt and pepper
For Serving
  • as needed cooked rice or noodles

Method

Preparation
  1. Start by washing and slicing your asparagus and mushrooms. Make sure your shrimp is peeled and deveined for a smoother cooking process.
Cooking
  1. In a large pan or wok, heat the vegetable oil over medium-high heat until shimmering.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, but be careful not to let it burn.
  3. Toss in the shrimp and stir-fry for about 3-4 minutes, or until they turn pink and opaque.
  4. Add the asparagus and mushrooms to the pan. Stir-fry for an additional 3-5 minutes until the asparagus is tender-crisp.
  5. Pour in the soy sauce and oyster sauce. Stir well to coat everything evenly. Cook for another 2 minutes, then taste and season with salt and pepper if needed.
  6. Drizzle sesame oil over the stir-fry for a nutty flavor. Mix well before serving.
Serving
  1. Enjoy your Shrimp and Asparagus Stir-Fry with steamed rice or noodles!

Notes

For added flavor, consider marinating the shrimp in some soy sauce and garlic for at least 15 minutes before cooking. Don't overcrowd the pan; stir-frying requires high heat to avoid soggy veggies. Customize with other vegetables like bell peppers or snap peas for varied texture and flavor. Store leftovers in an airtight container for up to 2 days.
