Ingredients
  

Grains
  • 1 cup rice (white or brown) You can use jasmine or basmati rice for added flavor.
Tofu
  • 1 block firm tofu, shredded Press the tofu for 15-30 minutes before shredding for a firmer texture.
Seasonings
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
Garnish
  • Chopped green onions For garnish

Method
 

Cooking the Rice
  1. Rinse 1 cup of rice under cold water to remove excess starch and combine it with 2 cups of water in a medium pot. Bring to a boil, then reduce heat to low, cover, and let it simmer for about 15-20 minutes or until all the water is absorbed.
Preparing the Tofu
  1. While the rice is cooking, shred the firm tofu using a fork or a grater.
Cooking the Tofu
  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the shredded tofu, soy sauce, garlic powder, ginger powder, and cumin. Mix well and cook for about 8-10 minutes until the tofu is golden and crispy.
Final Assembly
  1. Taste and season with salt and pepper. Fluff the cooked rice with a fork and divide into bowls. Top with crispy shredded tofu and garnish with chopped green onions.
