  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup frozen peas

  • 1 teaspoon thyme
  • to taste salt and pepper
  • 2 tablespoons olive oil

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and diced carrots; sauté for about 5 minutes, until they begin to soften.
  2. Add the minced garlic and cook for an additional minute, until fragrant.
  3. Add the ground beef or lamb to the pot, breaking it apart with a spoon. Cook until the meat is browned, about 6-8 minutes. Drain any excess fat if necessary.
  4. Pour in the beef broth and bring the mixture to a boil. Add thyme, salt, and pepper to taste. Let it simmer for about 10 minutes, allowing the flavors to meld together.
  5. Stir in the frozen peas and let the soup cook for another 5 minutes.
  6. To serve, ladle the savory soup into bowls and top with generous spoonfuls of mashed potatoes. Enjoy your bowl of comfort!
