Main Ingredients
  • 1 lb ground beef or lamb Use Halal-friendly ground chicken or turkey for a leaner option.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups beef broth
  • 2 cups mashed potatoes (prepared) Leftover mashed potatoes can be used.
  • 1 cup green peas
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme

Method
 

Preparation
  1. Start by chopping your onions, carrots, and celery. If you haven’t made mashed potatoes yet, you can prepare those while your soup cooks.
Cooking
  1. In a large pot, heat a drizzle of olive oil over medium heat. Add the ground beef or lamb and cook it until browned, about 5-7 minutes. Make sure to stir and break it apart with a wooden spoon.
  2. Throw in your chopped onions, carrots, and celery. Sauté everything together for another 5 minutes until the vegetables have softened.
  3. Sprinkle in the garlic powder, thyme, salt, and pepper. Mix well, letting those spice flavors infuse the meat and veggies.
  4. Add the beef broth to your pot and bring the mixture to a simmer. Wait for about 15-20 minutes, allowing all those delicious flavors to meld.
  5. Gently stir in the green peas and prepared mashed potatoes. Allow it to heat through, about 5 more minutes. If it gets too thick, you can add a splash of water or broth to reach your desired consistency.
Serving
  1. Ladle your Shepherd’s Pie Soup into bowls. Feel free to top it off with your favorite garnishes!

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze in freezer-safe containers for 2-3 months. Reheat on the stovetop over low heat with a splash of water or broth to restore texture and flavor.
