Soup Base
  • 1 pound ground beef or lamb Make sure it's Halal.
  • 1 medium onion, chopped
  • 3 medium carrots, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup frozen peas
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Preparation
  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced carrots, and minced garlic. Sauté until the onions are translucent and fragrant, about 5-7 minutes.
  2. Add the ground beef or lamb to the pot. Use a wooden spoon to break it up as it cooks. Season with salt and pepper. Cook until browned, approximately 5-10 minutes.
  3. Pour in the beef broth, followed by the diced potatoes, frozen peas, Worcestershire sauce, and dried thyme. Stir everything together.
  4. Bring the soup to a gentle boil, then reduce to a simmer. Cover the pot and let it cook for about 20-25 minutes, or until the potatoes are fork-tender.
  5. Once cooked, taste the soup and adjust seasonings as needed. If you want a creamier texture, you can mash some of the potatoes with your spoon.
  6. Ladle the soup into bowls and add your favorite toppings!

Notes

Consider ingredient substitutions such as turkey or chicken for a leaner option. Store leftovers in an airtight container for up to three days.
