  • 1 tbsp Olive Oil
  • 2 Bell Peppers Chopped
  • 1 Onion Chopped
  • 4 Flour Tortillas
  • 2 cups Cheese Shredded, such as Cheddar or Monterey Jack
  • 1 can Black Beans Rinsed and drained
  • Optional toppings Sour Cream, Salsa, Guacamole

  • Preheat the Oven: Start by preheating your oven to 400°F (200°C) to get it hot and ready for your delicious quesadillas.
  • Sauté the Vegetables: In a skillet over medium heat, add the olive oil. Once heated, toss in the chopped bell peppers and onion. Sauté for about 5-7 minutes until they are tender and fragrant.
  • Assemble the Quesadillas: On a large baking sheet, lay out two tortillas. Sprinkle half of the shredded cheese evenly over the tortillas. Layer on the black beans and the sautéed vegetables for that extra crunch and flavor.
  • Top It Off: Add the remaining shredded cheese on top and cover with the other two tortillas, creating a big quesadilla sandwich.
  • Bake: Place the baking sheet in your preheated oven and bake for about 10-15 minutes. You want the tortillas to turn golden brown, and for that cheese to melt into gooey perfection.
