  • 2 pounds Yukon Gold or red potatoes Choose fresh, high-quality potatoes.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried rosemary
  • Salt and pepper To taste.
  • Fresh parsley For garnish (optional).

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes thoroughly to remove any dirt. You can peel them if you prefer, but keeping the skin adds texture and flavor. Cut the potatoes into evenly sized cubes, about 1 inch each, for uniform cooking.
  3. In a large mixing bowl, combine the cubed potatoes, olive oil, garlic powder, onion powder, paprika, dried rosemary, salt, and pepper. Toss everything together until the potatoes are well-coated.
Cooking
  1. Spread the seasoned potatoes in a single layer on a baking sheet.
  2. Place the baking sheet in your preheated oven and roast for 30 to 40 minutes until golden brown, crispy on the outside, and tender on the inside, flipping the potatoes halfway through for even roasting.
Serving
  1. Once done, remove from the oven. Garnish with fresh parsley if desired, and serve hot alongside your favorite main dish.

Notes

For a twist, experiment with spices like Italian seasoning or Cajun spice blends. Store leftovers in an airtight container for 3-4 days and reheat in the oven for best results.
