Ingredients
  

  • - 4 large russet potatoes
  • - 3 tbsp olive oil
  • - 1 tsp garlic powder
  • - 1 tsp onion powder
  • - 1 tsp smoked paprika
  • - 1/2 tsp chili powder optional, for heat
  • - 1/2 tsp dried oregano or Italian seasoning
  • - 1 tsp salt or to taste
  • - 1/2 tsp black pepper

Instructions
 

  • **Preheat the Oven:** Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with non-stick spray.
  • **Prepare the Potatoes:** Wash and scrub the potatoes thoroughly. Cut each potato lengthwise into wedges, aiming for about 8 wedges per potato.
  • **Season the Wedges:** In a large mixing bowl, toss the potato wedges with olive oil to coat. Add garlic powder, onion powder, smoked paprika, chili powder, oregano, salt, and black pepper. Toss until the potatoes are evenly coated in the seasoning mixture.
  • **Arrange on the Baking Sheet:** Spread the seasoned wedges in a single layer on the prepared baking sheet. Make sure they aren’t overlapping to ensure even baking.
  • **Bake:** Bake in the preheated oven for 35–40 minutes, flipping the wedges halfway through. The potatoes should be golden brown and crispy on the edges when done.
  • **Serve Hot:** Remove from the oven and serve immediately with your favorite dipping sauce, such as ketchup, ranch, or garlic aioli.
