- In a pot of boiling water, add the mixed seafood and cook for about 3-5 minutes or until it turns opaque and is cooked through.
- Once cooked, drain the seafood and immediately transfer it to a bowl of ice water to stop the cooking process. Let it chill for a few minutes, then drain it again.
- In a large bowl, combine the mixed lettuce, halved cherry tomatoes, and sliced red onion.
- In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper until well combined.
- Add the chilled seafood to the bowl with the veggies. Pour the dressing over the top and gently toss everything together until well-coated.
