Ingredients
  

Seafood
  • 1 pound mixed seafood (shrimp, crab, and squid) Ensure seafood is fresh; frozen can be used if properly thawed.
Vegetables
  • 2 cups mixed lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
Dressing
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
Garnish
  • Fresh herbs (parsley or dill) For garnish before serving.

Method
 

Preparation
  1. In a pot of boiling water, add the mixed seafood and cook for about 3-5 minutes or until it turns opaque and is cooked through.
  2. Once cooked, drain the seafood and immediately transfer it to a bowl of ice water to stop the cooking process. Let it chill for a few minutes, then drain it again.
  3. In a large bowl, combine the mixed lettuce, halved cherry tomatoes, and sliced red onion.
  4. In a small bowl, whisk together mayonnaise, lemon juice, salt, and pepper until well combined.
  5. Add the chilled seafood to the bowl with the veggies. Pour the dressing over the top and gently toss everything together until well-coated.
  6. Garnish with fresh herbs before serving.
  7. Enjoy your delicious seafood salad!

Notes

Serve with crusty bread or garlic toast, and pair with chilled white wine or sparkling lemon-infused water. Store leftovers in an airtight container for up to 2-3 days and best enjoyed cold.
